I bicchieri dei metallari.............. Un piccolo decalogo sul bicchiere In questa sezione mi occupo dell'elemento principale della mia collezione e di conseguenza della mia passione per la birra: il bicchiere. Ogni bicchiere ha un suo nome, e il mastro birraio sa quale bicchiere associare ad ogni birra. Introduzione In alcuni di noi resiste la tentazione di associare la bionda al boccale o al calice a tulipano e la scura al baloon. Questo tipo di associazione è spesso valida, ma non sempre, poiché dipende dal tipo di birra oltre che dal colore. Qui a lato troverete una classificazione standard del bicchiere da birra, che troverete ovunque, ma quello che vorrei invece dirvi riguarda il modo di conservare, lavare, e trattare il bicchiere. Composizione Il vetro è frutto della fusione di composti silicei mescolati a calce e a carbonato di sodio o di potassio. Grazie alle sua proprietà principali, la lucentezza e la possibilità di lasciare inalterate le qualità organolettiche della bevanda, oggi è lo strumento principe nella conservazione e nella degustazione di questa bevanda. Associazione birra - bicchiere Qualche piccolo segreto va detto: la capacità del bicchiere deve essere sufficiente per contenere la birra e la sua schiuma: quest'ultima, infatti, protegge il liquido dal contatto diretto con l'aria e quindi l'ossidazione. Le birre a bassa fermentazione, come le lager e le pils, non hanno profumi decisi e devono essere servite in un bicchiere stretto e slanciato, per ridurre al minimo il contatto con l'aria e la dispersione dell'aroma. Le birre al alta fermentazione, invece, come le ale, le trappiste e le stout, sviluppano aromi più decisi delle altre e richiedono perciò bicchieri dai bordi leggermente svasati. Lavaggio Prima di ogni utilizzo, il bicchiere deve essere lavato con cura, evitando i detersivi sintetici: basterà infatti un risciacquo abbondante con acqua tiepida. Temperatura E' inoltre opportuno abbassarne la temperatura con un leggero risciacquo in acqua fredda, e questo per evitare che un bicchiere lasciato asciugare per molto tempo, raggiunga temperature intorno ai 30°C, e successivamente la birra spillata o versata da bottiglia fredda, subisca lo shock termico al contatto con il bicchiere "caldo". Spillatura o apertura bottiglia Il bicchiere va tenuto sempre inclinato per evitare che, mentre si versa la bevanda, si sviluppi troppa schiuma. I bicchieri a calice a gambo e quelli muniti di manico hanno il vantaggio di evitare di scaldare la birra con il calore delle dita. Nel dettaglio, bicchiere per bicchiere ALTGLASSBALLOON  Cilindrico, per non esaltare né mortificare la schiuma; sottile, per dare già al tatto la sensazione della freschezza. Destinato pertanto alle ambrate Alt. Forma a chiudere, per esaltare la schiuma; superficie ampia, per favorire lo scambio termico. Per birre da meditazione, corpose.CALICE A CHIUDERECALICE A TULIPANO La forma rastremata "alza" la schiuma, impedendole al tempo stesso di traboccare; il vetro sottile e liscio favorisce la formazione di condensa. Valorizza lager e pils. La bocca svasata impedisce una schiumatura troppo abbondante e favorisce la percezione olfattiva al profumo. Per birre aromatiche, come le belghe d'abbazia.COLONNA BICONICA COLONNA CONICA  Vetro di spessore medio, forma allargata al centro, bocca a chiudere: per pils belghe e per bevitori che vogliono la schiuma decapitata dalla spatola. Come il precedente, ma a imboccatura larga per controllare la schiuma. Adatto alle vivaci e profumate birre danesi.COPPAFLÛTE Forma più o meno esattamente emisferica, che abbassa progressivamente la schiuma ed esalta il profumo. Una forma essenziale per birre secche, di schiuma abbondante e da servire fredde: ecco l'identikit della pils.KÖLSCHGLASMASS (VETRO TEDESCO)Cilindrico, sottile, piccolo: il bicchiere più semplice per una birra tipica, quasi artigianale, a circolazione limitata. Spesso, per conservare la freschezza; lavorato, per valorizzare il perlage, cilindrico, con effetto neutro sulla schiuma. È il bicchiere universale, nato però per le märzen e per le export.PINTASTEIFEL La forma a cono rovesciato e lo slargo subito sotto l'orlo neutralizzano qualsiasi velleità di schiuma delle bitter ales e valorizzano invece la cream delle stout. Non importa che cosa ci si beve ma come si beve. La sua forma infatti gioca brutti scherzi agli inesperti. È il bicchiere dell'iniziazione alle confraternite studentesche in Germania.BOCCALE VETROVETRO BRITANNICO  Non dimentichiamo comunque il vecchio boccale caro ai bavaresi e ai super bevitori!  Di vetro spesso, per conservare la temperatura di cantina; liscio, per evidenziare lo scarso perlage. Adatto alle ales e in particolare alle pale ales.WEIZENBECKERCERAMICA Capacità "fissa" di mezzo litro. La svasatura alla sommità serve a controllare l'abbondantissima schiuma di birre di grano, le weizen o weissbiere. In ceramica viene usato specie in Germania, durante le feste e specie nell'Oktober Fest. Molto delicato è molto richiesto dai collezionisti. |
